Slow Carb Super Easy Instapot Gumboliaya Recipe

This nutritious delicious cajun inspired slow carb meal is incredibly fast and easy, and all the main ingredients come from the freezer or dry pantry. You can also portion it out and store the finished product in the freezer for up to about 6 months, for a quick and easy any time meal.

Ingredients:

1 bag frozen okra
1 bag frozen mirpoix
1 bag frozen black eyed peas
1 lb chicken breasts
1 lb sausage (andouille, hot links, or a smoked pork based sausage)
1 can diced tomatoes
1 cup water
1 chicken or vegetable bouillon cube
3 tbsp olive oil

Cajun seasoning:
1-2 tbsp kosher salt to taste
1 tsp ground black pepper
1 tsp dried thyme
1/2 tsp paprika
1/2-1 tsp cayenne pepper

 

Directions:

Put your instapot on “Brown” with a timer of 10 minutes. Once pre-heated add the olive oil and chicken, stirring every 2-3 minutes. After 5 minutes, add your sausage, continuing to stir every few minutes. Don’t stir too often, you want to develop some good brown bits. Once the browning cycle has finished add all the other ingredients and put on pressure cook for 40 minutes on high.

That’s it! Let your pot depressurize and spoon yourself a large bowl of slow carb yummy goodness.
